One of the objectives of the city’s food policy is to promote sustainable and healthy food choices. However, as a city we have limited tools to influence consumers choices. We can inform people, promote and encourage certain choices, give a positive example by sustainable procurement… but our budgets are relatively limited and of course we can not prohibit certain choices.
Nudges are subtle interventions that steer people’s behaviour without limiting choice. Which nudges can a city apply within its area of competence to steer consumers towards more healthy food choices? Which interventions are most effective? Should we focus on certain areas or target groups (eg. school environments)?
What has been done already?
We have done/tried a lot; eg. the thursday veggy day campaign which is still very successful. But we feel this campaign has reached its limits. We would also like to promote other topics like local/ seasonal food.
